Simple Pickled Onions with Apple Cider Vinegar
Ingredients:
1 medium red onion, thinly sliced
1/2 cup apple cider vinegar
1/2 cup water
1 tablespoon sugar
1 teaspoon salt
Optional: a few black peppercorns or hot peppers for extra flavor
Instructions:
Place the sliced onions in a clean jar or container with a lid.
In a small pot, combine the apple cider vinegar, water, sugar, and salt. Simmer until the sugar and salt dissolve.
Pour the hot vinegar mixture over the onions, ensuring they're fully submerged.
Seal the jar and let it sit at room temperature for 1 hour, then refrigerate. The onions will be ready to eat in about 1 hour but will taste best after a few hours or overnight.
Storage: Store in the fridge for up to 2 weeks. Enjoy on salads, tacos, sandwiches, or any dish that needs a tangy crunch!
