Lazy Girl Crockpot Carnitas

Okay, so I’ve been avoiding creating this recipe. '

Not because it’s not insanely delicious (which it is) - but because it’s so simple I hate to even call it a recipe.

5 simple ingredients, prepped in 5 minutes and dinner is on the table in 15mins flat. Yeah, it’s that easy.

Okay so yes, it needs like 6-10 hours in the crockpot, but it really is that simple. Let me explain…

5 ingredients. Prepped in 5 minutes.

Lazy Girl Crockpot Carnitas Recipe

Ingredients:

5lb Pork Butt (I like bone-in for the added gelatin-y goodness, but you do you boo)

1 can Diced Green Chiles

1 16oz-jar Salsa Verde or salsa of choice (Check ingredient labels and choose one with minimal to no additives)

1 Tbsp Garlic Powder

S+P to taste

1/4 cup Water

Directions:

  1. Fill bottom of the pan with water. Add meat directly to crockpot.

2. Top with seasonings.

3. Add the salsa and green chiles. Top with a lid and plug in the crockpot. (Don’t be like me and forget this step.)

4. Choose your heat. Cook on low for 8hrs, high for 6hrs. (Adjust for meat size.)

6. Once cooked, shred in the crockpot with all the juices. (Or if you’re lazy like me, you can toss it in the KitchenAid Mixer with the little paddle thing for a minute and shred it that way. Add it back to the juices when finished.)

NO MIXER? NO PROBLEM.

Simply shred with two forks in the crockpot.

7. Serve with mango salsa, creamy avocado salsa verde and cilantro on your favorite tortilla! (Comment below if you want the recipes)

You can even make this ahead and then crisp up the carnitas in a pan before serving. SO GREAT for parties and entertaining, meal prep, leftovers, etc.
